Strawberry matcha lemonade
Matcha and citrus are a natural pair: the acidity lifts the grassy sweetness of the leaf. Layer it over strawberry and it looks like a sunset in a glass.
What you need (one tall glass)
- 1 teaspoon (about 2 g) Matcha Organics ceremonial matcha
- 2 oz (60 ml) hot water, about 175°F / 80°C
- 4 to 5 strawberries, hulled, plus one to garnish
- 1 tablespoon honey or sugar
- Juice of half a lemon (about 1.5 tablespoons)
- 4 oz (120 ml) cold sparkling or still water
- Ice
Method
- Make the strawberry base. Mash the strawberries with the honey and lemon juice in the bottom of the glass (or blend them for a smoother drink).
- Top with ice and pour in the cold water. Stir the bottom layer gently so it stays pink.
- Whisk the matcha. Sift it into a small bowl or jar, add the hot water and whisk or shake until smooth.
- Pour the matcha slowly over the ice so it floats on top. Garnish with a strawberry. Stir just before you drink.
Make it for a crowd
Blend 1 lb of strawberries with the juice of two lemons and 3 tablespoons of honey for the base, and whisk 4 teaspoons of matcha with 8 oz of hot water. Pour the base into a pitcher over ice, top with sparkling water, and float the matcha on top just before serving.
