What is Matcha Green Tea?

Matcha green tea is an oriental blend of tea that has been highly revered as a delicacy in China and Japan since the 10th century. Specially prepared tea leaves are ground down to prepare Matcha green tea powder which creates a nutritionally beneficial strand of tea that has customarily been used in Japanese tea rituals called ‘chanoyo’.

The Koicha blend uses twice the amount of Matcha powder with half the amount of water and rather than quickly whisking the powder, it is prepared by gently kneading the powder using a bamboo whisk. The much thicker Koicha is used in traditional ceremonies and is consumed as a delicacy.

Once the bushes are harvested, only the best buds are picked and the leaves are put out to dry. These dry leaves are called Tencha leaves. Depending on your preparation method, two types of Matcha green tea can be brewed. The most common kind is called Usucha, also known as the ‘thin tea’. When it is ready, you’ll see small bubbles on top of the mixture. If bigger bubbles start to appear, the mixture is overcooked. Use a sifter to pour and your Matcha green tea is ready. The quicker preparation time of Usucha has made it the more popular type of Matcha.


Koicha, which literally means ‘thick-tea’ is made using the highest quality of Matcha powder and a different process. To start off, you add 4 teaspoons of the powder to 3 ounces of water. Rather than whisking, you would lightly knead the mixture using a bamboo whisk or a chasen. The resulting beverage would have a thick texture and a much stronger flavor. Koicha is normally served at traditional Japanese events and is considered to be a delicacy.


Now, let's just say that you don’t have all these fancy tools. Now what? Well, there are two alternative ways that you can prepare matcha green tea. The first one is by adding one tsb of matcha into a cup, add a very small amount of water and then use the back of a spoon to mix the matcha into a paste. Once all the lumps are out, you can pour the rest of the water into the cup. The second option is by using a Blender Bottle, which is my favorite. What I do is add 1tsp of matcha into a blender bottle and then add water, shake and drink. I personally like my matcha in cold water, so it works out best this way.   


It is to be noted that different types of Matcha tea powders are used to create the two types of Matcha tea. Usucha powder is made from lower quality leaves while only the highest quality of tea leaves are used for the preparation of Koicha.
